In a food processer that has a grater (or you can hand grate) grate


  • 1 large carrot stick
  • ½ raw beetroot
  • ¼ of red cabbage (gauge how much you want in the salad)
  • 2 decent handful of chopped fresh mint
  • 1 decent handful of chopped coriander or parsley
  • 1-2 tbsp of apple cider vinegar (or more if you want)
  • 2 tbsp of good quality mayo (or use our Creamy Avocado Basil Dressing)


  • When all grated and mixed together, add a good quality mayo to the mix.
  • Add your choice of chopped protein, such as feta cheese, chicken, beef or fish.
