In a food processer that has a grater (or you can hand grate) grate
- 1 large carrot stick
- ½ raw beetroot
- ¼ of red cabbage (gauge how much you want in the salad)
- 2 decent handful of chopped fresh mint
- 1 decent handful of chopped coriander or parsley
- 1-2 tbsp of apple cider vinegar (or more if you want)
- 2 tbsp of good quality mayo (or use our Creamy Avocado Basil Dressing)
- When all grated and mixed together, add a good quality mayo to the mix.
- Add your choice of chopped protein, such as feta cheese, chicken, beef or fish.
